ADF +

The association of Alain Ducasse’s training centre professional savoir-faire with culinary schools all over the world.

ADF+: An international pedagogical partnership project.
WHAT IS ADF+?
1. A professional savoir-faire passed on like a philosophy.
With 3 three-star restaurants in the guide Michelin (the Louis XV in Monaco, the Plaza Athénée in Paris and the Essex House in New York) and about 30 other restaurants established on all the continents, Alain Ducasse is an international chef, figurehead of French cuisine excellence everywhere in the world. In order to bring such a quality to perfection and to maintain it, Alain Ducasse always worked on the passing-on of his knowledge. Acting in accordance with Alain Ducasse’s guiding line, ADF passes on this unique savoir-faire through culinary consultancy, professional and non-professional training and cooking demonstrations.
2. A dedicated degree course
Today, ADF+ enables Alain Ducasse’s training Centre to create and set up « co-branded » trainings everywhere in the world, with various pedagogical partners willing to train tomorrow’s cooks. ADF+ program can adapt to local obligations, and enables pedagogical partners to provide their students with an international-looking training, which answers today’s catering challenges. The pedagogical trainings in cooking, confectionery, bakery, service and wine waiter’s duties provided within the framework of ADF+ program are created by the technical staff of Alain Ducasse’s Training Centre. The classes (practical and theoretical) are given by teachers from the partner school, trained and certified by Alain Ducasse’s chefs beforehand.
3. A modern vision
Through ADF+, the objective of Alain Ducasse’s Training Centre is to provide partners and students with the professional pedagogical vision and the culinary excellence that make the strength of its staff. The selection of subjects is optimised in order to give students a quality teaching that matches today’s catering professional realities.
4- A global partnership
Within the framework of an ADF+ project, Alain Ducasse’s Training Centre joins with the partner entity and places itself in its service in order to develop training. this accompanying process also covers the fields of marketing, communication, publicity events and derivatives (pedagogical medium, cutlery, etc.), as well as kitchen building plans, if necessary.
5- An ADF+ network
The pedagogical partners of Alain Ducasse’s Training Centre form a network that allows exchanges of students or chefs and the setting up of common events. This network aims at promoting the various trainings provided within member schools throughout the world, and thus at easing pedagogical and marketing synergies that might take place.
